Method

Heat the oven.
Heat the oven to 500 degrees Fahrenheit. A pizza stone should be preheated in the oven for at least 20 minutes to get it nice and hot.

Creating the sauce
If you're using my sauce recipe, combine the ingredients in a bowl and mix. Just enough sauce remains from the recipe to cover one large pizza. If you're cooking more than one pizza, you may just double the recipe.

Spread the dough out:
The dough should be rolled out on a lightly dusted surface. Allow it to rest for 5 minutes to allow it to reach room temperature if rolling is difficult. I like to lay out my dough into a circle that is about 14 inches in diameter for large pizzas.

Add the toppings:
Place the dough on a pizza peel that has been lightly floured. Alternately, insert it into a substantial cast-iron pan.
Spread a thin layer of sauce over the entire pizza, leaving a 1/4-inch crust around the edges. Sprinkle the sauce with the chopped remaining half of the pepperoni. Grated cheese and the remaining pepperoni are sprinkled on top of the pizza. Use black pepper to season.

Cook the pizza:
Carefully place the pie in the centre of a hot pizza stone if you're using one. Cook for 6 minutes, then turn the pizza over halfway through to ensure even cooking. Cook the crust for a further 6 to 8 minutes, or until it is golden brown and partially toasted.

Press the dough onto a cast iron skillet if you're using one, then top with ingredients. To pre-heat the skillet and begin the crust's immediate heating, place it over a burner set to high heat for two minutes. Transfer the dish to an oven set to 500 degrees Fahrenheit, and bake for 10 to 12 minutes, or until the crust is golden.

Slice and serve:
Slide the pizza out onto a cutting board using a pizza peel. Slice the pizza when it has rested for a minute. Add fresh oregano as a seasoning (optional). Serve hot with a salad on the side.
